    Pad Krapow (Pork & Basil Stir Fry)

    Pad Krapow (Pork & Basil Stir Fry)

    I fell in love with this popular Thai dish while traveling there in 2020! This recipe is super easy to make and ready within 30 minutes.

    Ingredients
      

    • 1 lb Ground Pork
    • 2 cups Thai Holy Basil (see notes)
    • ¾ cup Green Beans, cut into 1" pieces
    • 2-4 Thai Hot Chilis, thinly sliced
    • 4 cloves Garlic, crushed
    • 2 tablespoon Olive Oil
    • ¼ cup Oyster Sauce
    • 4 teaspoon Light Soy Sauce
    • 2 teaspoon Dark Soy Sauce
    • 2 teaspoon Sugar
    • ⅓ cup Water
    • 4 Fried Eggs (1 per plate)
    • 3 cups Cooked Basmati Rice (1½ cups dry)

    Instructions
     

    • Fry the eggs in a wok and set them aside. Here's a good step-by-step guide by The Food Network.
    • Cook the Basmati Rice. I like to use Piping Hot Curry's Instructions for an Instant Pot.
    • Heat 1-2 tablespoon of olive oil over medium-high in the wok. Crush the garlic and chilis together then cook until fragrant (~30 seconds).
    • Add the ground pork and cook until no longer pink (~5 minutes).
    • After the meat has browned, add the cut green beans, oyster sauce, soy sauces & sugar to the wok. Allow the sauce to cook into the meat/beans for a couple minutes with minimal stirring.
    • Toss the basil into the wok and slowly add water until the dish is to the desired consistency (~2-5 min).
    • Serve hot with rice and a fried egg.

    Notes

    • Pad Krapow is traditionally made with Holy Basil which has a distinctive flavor profile that’s similar to fennel. Unfortunately this type of basil can be difficult to find in the States. For this reason you can substitute with Thai Basil (cinnamon taste) or regular Sweet Basil if those are all you can find at your local Asian market or grocery store.
    • Cut out the seeds from the Thai Hot Chilis to remove some of the heat.
    • Oyster Sauce usually contains corn starch and can also have gluten so make sure to read the ingredient label if you have intolerances.
