I only recently discovered the joy of roasting radishes. They are an awesome substitute for typical sides like potatoes. Being a huge fan of sauce, I combined these with an optional balsamic glaze to dress them up a bit. I think it adds a delightful bite myself. Add these as a side or just enjoy them alone as a snack!

    Instructions

    Radishes

    1. Preheat oven to 425F.
    2. Rinse then remove the stem and root of the radishes. Cut them in half or quarters, depending on size.
    3. In a bowl, combine the radishes with oil, rosemary, garlic powder and salt.
    4. Spread evenly on a baking rack and roast for 45 minutes, stirring halfway through.
    5. Top with balsamic glaze.

    Balsamic Glaze

    1. Combine balsamic vinegar with coconut sugar in a small saucepan over medium heat. Stir constantly until sugar has dissolved.
    2. Bring to a boil then reduce heat until a steady simmer. Reduce glaze by half, ~20 minutes.
    3. Let cool and pour into a jar with a tight lid. Store in the refrigerator if not using immediately.

Hint: Don’t overcrowd the baking pan. This will prevent the radishes from roasting correctly.
