    Two words that always sparked joy in my childhood: Artichoke Cheesies! I learned this addicting appetizer recipe from a very special person in my life, Jeffie, my best friends’ mom. I’m sharing this today to honor her on what would be her 73rd birthday. I miss her dearly. 💜

    Artichoke Cheesies

    I learned this addicting appetizer recipe from a very special person in my life, Jeffie, my best friends' mom. 💜

    Ingredients
      

    • 1 box Melba toast crackers
    • 14 oz quartered artichoke hearts, chopped
    • ¾ cup mayo
    • 1 cup shredded parmesan cheese
    • ¼ cup shredded mozzarella cheese
    • ¼ cup shredded cheddar cheese

    Instructions
     

    • Set oven to 350℉.
    • Mix all ingredients together in a bowl and then spread onto crackers on a baking tray.
    • Bake in the oven for 15-18 minutes, until cheese is melted and lightly browned on top.
    • Serve immediately.

    Notes

    • If you can’t find the Melba cracker brand specifically any toast cracker will do.
    • You can adjust the amounts of cheese/mayo/artichoke to your liking.
