    Caesar Dressing Without Anchovies

    Rich, creamy and anchovy-free, this easy Caesar Dressing is fresher and more delicious than anything you’d buy!

    I love Caesar salad, but anchovies in the dressing have always been a bit hit or miss for me. So, I started playing around with my own version over a decade ago. After years of little tweaks and loving adjustments, this final version has stuck for quite a long time – and is even one of my friend’s kids favorites. While making it for dinner last night I thought: this deserves to be posted. So here it is…my go-to Caesar Dressing Without Anchovies (finally) making its internet debut!

    Caesar Dressing Without Anchovies

    Ingredients
      

    • 1 cup grated parmesan cheese
    • 1 cup olive oil
    • ¾ cup mayo
    • 2 large lemons, juiced
    • 3 teaspoon worcestershire sauce
    • 3 teaspoon dijon mustard
    • 2 teaspoon balsamic vinegar
    • 2 teaspoon dried minced garlic
    • 1½ teaspoon black pepper
    • 1 teaspoon salt
    • hot sauce to taste (I use Cholula)

    Instructions
     

    • In a large jar or small bowl, whisk together lemon juice, mustard, worcestershire sauce, balsamic vinegar, minced garlic, salt and black pepper until fully combined.
    • Add mayo, oil and parmesan cheese and stir together well.
    • Whisk in hot sauce to taste.
    • Cover and refrigerate until ready to serve.

    Notes

    • This recipe makes 2 cups total.
    • Stores in the fridge for up to 2 weeks.
