    These pancakes are a scrumptious start to any morning! They are AIP, Paleo & Top 8 friendly.

    These pancakes are a scrumptious start to any morning! They are AIP, Paleo & Top 8 friendly.

    My AIP-compliant pancakes come together simply and easily. Deliciously made with coconut flour and banana, these check both the grain-free and nut-free boxes. They are truly a delightful alternative to traditional pancakes.

    Ingredients

    • Banana​
    • Coconut cream
    • Coconut flour
    • Arrowroot flour
    • Cream of tartar
    • Baking soda
    • Salt 
    • Apple cider vinegar
    • Vanilla extract
    • Cinnamon
    • Oil of choice

    These pancakes are a scrumptious start to any morning! They are AIP, Paleo & Top 8 friendly.

    Instructions

    1. Combine all of the ingredients in a medium bowl, mix well, and let sit for 5 minutes.
    2. Generously coat a medium saute pan with oil and heat on medium-low.
    3. With your hands, mold mix into pancakes (~ 3” in diameter) and add to the pan.
    4. Cook for 8-10 minutes (or until the center is set.)
    5. Carefully flip pancakes with a wide paddle spatula. Cook for an additional 3-5 minutes.
    6. Cover with berries of choice and/or maple syrup. Serve immediately.

    Hint: Be patient! You’ll know the pancakes are ready to flip when it’s easy to do so (they shouldn’t break apart.)

    Ingredients
      

    • 1 banana, mashed (~⅓ cup)
    • ¼ cup coconut cream
    • ¼ cup coconut flour
    • 2 tablespoon arrowroot powder
    • ½ teaspoon cream of tartar
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • ¼ teaspoon apple cider vinegar
    • ¼ teaspoon cinnamon
    • ¼ teaspoon vanilla extract (optional)
    • 2 teaspoon coconut oil
