Pancakes

These pancakes are a scrumptious start to any morning! They're AIP, Paleo & Top 8 friendly.

Ingredients
  

  • 1 banana, mashed (~⅓ cup)
  • ¼ cup coconut cream
  • ¼ cup coconut flour
  • 2 tablespoon arrowroot powder
  • ½ teaspoon cream of tartar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon apple cider vinegar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla extract (optional)
  • 2 teaspoon coconut oil

Instructions
 

  • Combine all of the ingredients in a medium bowl, mix well, and let sit for 5 minutes.
  • Generously coat a medium saute pan with oil and heat on medium-low. With your hands, mold mix into pancakes (~ 3” in diameter) and add to the pan.
  • Cook for 8-10 minutes (or until the center is set.) Carefully flip pancakes with a wide paddle spatula. Cook for an additional 3-5 minutes.
  • Cover with berries of choice and/or maple syrup. Serve immediately.

Notes

  • Generously coat the pan with oil.
  • Coat spatula with oil before flipping.
  • Be patient! You’ll know the pancakes are ready to flip when it’s easy to do so (they shouldn’t break apart.)
