Rich, creamy and anchovy-free, this easy Caesar Dressing is fresher and more delicious than anything you’d buy!


I love Caesar salad, but anchovies in the dressing have always been a bit hit or miss for me. So, I started playing around with my own version over a decade ago. After years of little tweaks and loving adjustments, this final version has stuck for quite a long time – and is even one of my friend’s kids favorites. While making it for dinner last night I thought: this deserves to be posted. So here it is…my go-to Caesar Dressing Without Anchovies (finally) making its internet debut!

Caesar Dressing Without Anchovies
Rich, creamy and anchovy-free, this easy Caesar Dressing is fresher and more delicious than anything you'd buy!
Ingredients
- 1 cup grated parmesan cheese
- 1 cup olive oil
- ¾ cup mayo
- 2 large lemons, juiced
- 3 teaspoon worcestershire sauce
- 3 teaspoon dijon mustard
- 2 teaspoon balsamic vinegar
- 2 teaspoon dried minced garlic
- 1½ teaspoon black pepper
- 1 teaspoon salt
- hot sauce to taste (I use Cholula)
Instructions
- In a large jar or small bowl, whisk together lemon juice, mustard, worcestershire sauce, balsamic vinegar, minced garlic, salt and black pepper until fully combined.
- Add mayo, oil and parmesan cheese and stir together well.
- Whisk in hot sauce to taste.
- Cover and refrigerate until ready to serve.
Notes
- This recipe makes 2 cups total.
- Stores in the fridge for up to 2 weeks.
