Apple Cinnamon Tea

Ingredients
  

  • 4 cups water
  • 1 sweet apple (e.g. Honeycrisp, Pink Lady, Gala)
  • 1 3” cinnamon stick (½ teaspoon ground)
  • tablespoon lemon juice
  • 1 teaspoon freshly grated ginger root (½ teaspoon ground)
  • 2 whole cloves
  • ¼ teaspoon black peppercorns (optional, omit for AIP)
  • 1 tablespoon honey (optional, omit for Whole30)

Instructions
 

  • Add water, cinnamon, ginger, lemon, cloves and black peppercorns to a pot.
  • Bring to a boil, then reduce heat to simmer for 5-7 minutes, or until you can smell the cinnamon.
  • While the ingredients are simmering, rinse, peel and chop the apple into bite-sized pieces.
  • Add the apple and simmer for 2-3 minutes.
  • Cut the heat, cover the pot, and let sit for 5 minutes, undisturbed.
  • Strain the tea to remove the contents and stir in honey if desired.

Notes

  • Freshly grated ginger and a cinnamon stick taste best, but if those ingredients aren't available, use dried spices.
  • Grate the ginger as is. There is no need to peel off the skin first.
  • Adding the honey at the end retains the most nutrients and antibacterial properties.
