Apple Cinnamon Tea
This zesty apple tea is the perfect antidote to a stressful day!

- 4 cups water
- 1 sweet apple (e.g. Honeycrisp, Pink Lady, Gala)
- 1 3” cinnamon stick (½ teaspoon ground)
- 1½ tablespoon lemon juice
- 1 teaspoon freshly grated ginger root (½ teaspoon ground)
- 2 whole cloves
- ¼ teaspoon black peppercorns (optional, omit for AIP)
- 1 tablespoon honey (optional, omit for Whole30)
Add water, cinnamon, ginger, lemon, cloves and black peppercorns to a pot.
Bring to a boil, then reduce heat to simmer for 5-7 minutes, or until you can smell the cinnamon.
While the ingredients are simmering, rinse, peel and chop the apple into bite-sized pieces.
Add the apple and simmer for 2-3 minutes.
Cut the heat, cover the pot, and let sit for 5 minutes, undisturbed.
Strain the tea to remove the contents and stir in honey if desired.
- Freshly grated ginger and a cinnamon stick taste best, but if those ingredients aren't available, use dried spices.
- Grate the ginger as is. There is no need to peel off the skin first.
- Adding the honey at the end retains the most nutrients and antibacterial properties.
